You should be able to make this chili in less than 60 minutes since that was the task we needed to complete it in but, relax and enjoy the process. It's a great tasting chili!

This is a pretty straight forward chili recipe with just one major exception, BACON SAUSAGE. We use beans, tomatoes, cumin, onions, garlic, and beef, just like millions of difference chili recipes out there. Where we differentiate is when we use Bacon Sausage. If you are looking to up your chili game, add some real complexity to your dish, then you need to start using Bacon Sausage from Big Fork. It's a total game changer, an award winner.
1 package Big Fork Bacon Sausage, Black Pepper or Spicy 3 – Pepper, sliced, chopped
1 onion, chopped
4 cloves garlic, minced
2 poblano, skin charred and removed, chopped
1/12 oz. bottle dark brown ale
1/16 oz. can kidney beans, drained and smoked using a smoking gun for 5 minutes covered
1/24 oz. can crushed tomatoes
2 T. chili powder
2 T. cumin
1 t. crushed oregano
1 t. salt
½ t. black pepper
½ t. cayenne pepper (if you want it hot)
Garnish:
Sliced Avocado
Crushed Fritos
Dollop Sour Cream
Lime Wedge
Chopped Cilantro
Directions
In a skillet, brown the beef in a pan until brown. Remove from the pan and pour out the grease. Reserve.
Add the sausage and cook until the sausage is brown. Add the onions and cook until the onions caramelize. Add the garlic and poblano and cook on medium low for 5 minutes.
Add the beer and the ground beef and cook on high for five minutes.
Add the remaining ingredients and simmer for at least 30 minutes.
Garnish the chili with the above garnishes and serve.
Recipe Note
Chili is often served with a variety of toppings, such as shredded cheese, sour cream, diced onions, and jalapeños. It can be eaten on its own as a hearty and filling meal, or served over rice or with a side of cornbread. Chili can also be used as a topping for hot dogs, nachos, or baked potatoes, among other dishes.
